• Fermentation is an ancient and natural process, with the first known use of fermentation dating back to the Neolithic age. Many of our favorite foods and drinks are fermented such as cheese, pickles, sauerkraut, and beer! Besides being delicious, many people believe that fermented foods have great health benefits too!

    What is Fermentation?

    Simply put, fermentation is the breaking down of food into more basic parts. Microorganisms use anaerobic metabolism to convert our food into other forms of itself!

    Health Benefits of Fermentation

    According to Sandor Katz in his informative book, “The Art of Fermentation” there are 4 main health benefits of Fermentation:

    1. Pre-digestion of nutrients into more “accessible and bioavailable forms”

    2. Nutritional Enhancement. During Fermentation certain vitamins can increase their presence (especially B vitamins!) and occasionally new micronutrients are created that were not present in the original food.

    3. Detoxification. In some cases, Fermentation actually removes toxins from foods making them edible or more digestible, as with some nuts, tubers, and grains.

    4. Live Bacterial Cultures– This is where we get into “probiotics”. Though this word is often casually thrown about, it generally refers to live microbes that are present in some fermented foods that have not been heated (like homemade sauerkraut!). Scientists are still working on the details, but consuming a variety of Live Bacterial Cultures seems to make for a happy and healthy body.

    One of the most obvious benefits of Fermentation is food storage! Fermentation was being used to preserve foods long before refrigeration was invented. A fresh cucumber might rot in your fridge after a week or two, your homemade pickles will still be delicious and ready to eat for months and maybe even years!
